Cilantro Lime Chicken Salad

Marinade Time: 30 min to overnight
Cook Time: 20 minutes

Ingredients:

  • 2 chicken breasts
  • ½ cup Good Foods Avocado Salsa
  • Seasoning mixture: ½ tsp each chili powder, ground cumin, onion powder and 1/8 tsp cayenne pepper
  • 1 head romaine lettuce, chopped
  • 1 Roma tomato, diced
  • 1 cup sweet corn, charred
  • 1 cup black beans, drained and rinsed
  • 1 avocado, diced
  • 4 Tbsp Good Foods Cilantro dip (as dressing)
  • Toppings: shredded cheddar cheese, Sante Fe flavored tortilla strips, fresh cilantro, juice of a lime wedge

Directions:

  1. Place chicken in a resealable bag or container. Add ½ cup Good Foods Avocado Salsa and seal. Place in refrigerator to marinate for at least 30 minutes; ideally 2 hours (up to overnight).
  2. Preheat oven to 450°. Line a baking sheet with aluminum foil and coat with cooking spray.
  3. Remove chicken from marinade and place on baking sheet. Top with remaining marinade if any. Sprinkle with seasoning mixture of chili powder, cumin, onion powder and cayenne.
  4. Roast for 20 minutes or until chicken reaches an internal temperature of 170°. Bake time will vary depending on thickness of chicken breast.
  5. Slice or dice chicken.
  6. Assemble salad, dividing ingredients in half to fill two bowls.
